		<description>When I first saw this dish I thought it was a kind of tofu.  Done well, it can be really tasty.  I&#039;d say it&#039;s a very Shanghainese sort of dish, since I&#039;ve found it in the backwoods of Fengxian and Nanhui counties.  I&#039;ve mostly had it served cold.  Sometimes (and it looks like it in your picture) it has chestnuts in it.</description>
